2 cups sliced Zucchini (1/2 centimeter disks)
2 cups sliced Summer Squash (1/2 centimeter disks)
2 cups sliced Table Mushrooms
2 cloves minced Garlic
1 cup minced Yellow Onion
2 Tbsp Olive Oil
1 Tbsp House Seasoning
1 Tbsp Parsley, chopped
Directions:
- In a large skillet, heat the Olive Oil on low heat. Add the Garlic and Onion, stirring about 1 minute.
- Add the Zucchini, Squash, Mushrooms and Seasoned Salt.
- Saute until the medley pieces are tender. To add browning to the medley, let pieces go un-moved for 1 minute.
- Remove to serving bowl and mix in the Parsley.
NOTES: This is my mother’s recipe. She used to make this very often, and would use Lawry’s Seasoned Salt. I remember this being one of my favorite side dishes. For this recipe, I use my House Seasoning.
