When giving an ethnic label, I reference several cookbooks, online resources, and compare with ethnic dishes that are similar. In several of these dishes you may see in the notes section something like “Authentically, there would be [ingredient], but I chose to add [other ingredient] instead.” Additionally, many of the recipes that I have collected over the years were shaped or given to me by folks from those regions–I have many more than I’ve transcribed to the online site.
